Top Impression Bakery began with a single store outside Wolli Creek station, combining classic French pastry techniques with bold fusion flavours. Since then, the business has grown into a multi-site Sydney bakery brand, with company-owned stores, franchise partners and a wholesale operation supporting the network.
As the business expanded, the finance function needed to evolve with it.
The Challenge
When Air first started working with Top Impression, the finance processes reflected a much smaller business. Accounting was largely managed through spreadsheets, receipts and supplier bills were captured manually, and financial information was generally reviewed after the fact.
As the business grew, the directors needed better visibility over margins, wages, tax obligations and cashflow so they could make decisions with greater confidence and plan for new store openings.
With food and labour representing two of the largest costs in hospitality, timely and accurate reporting became increasingly important as the number of venues increased.
The Solution
Air worked with Top Impression to build a finance function that could support its growth. This included introducing cloud accounting systems, improving the capture of supplier bills and expenses, and implementing payroll and rostering processes that gave management clearer visibility over labour costs.
Air also introduced a structured quarterly reporting rhythm, giving the directors greater visibility over COGS, labour margins, tax obligations and cashflow ahead of key decisions.
As Top Impression expanded into franchising and wholesale, Air helped design the accounting and entity structures to support the model and developed reporting that provided visibility over costs and performance across the wider group.
Alongside the business, Air has also supported the director with personal wealth structuring and asset protection as the value created through the business has grown.
